Hello vegan family, trust you all are having a good week. Today I made potatoes and beans porridge. Beans is one meal I like a lot because they are high in fiber, protein and other nutrients. They can be eaten anytime of the day. Potatoes are also nutritious, they also contain fiber and are rich in vitamins.
Here are all the ingredients used for this dish
- 5 medium sized potatoes
- 3 cups of beans
- 2 onion bulbs
- 2 cooking spoon of palm oil
- Some habanero pepper seeds (According to your preference for peppery foods)
- 1 table spoon of salt
Preparation
Pick the beans and remove chaffs, wash and parboil for 10mins.
Peel, wash and chop the onions
Wash and crush or blend the peppers to be used
Take the beans off heat and sieve out the water. Pour in some more water and sieve again
Put some of the chopped onions in the parboiled beans. Put in some water and leave to cook again for 10 - 15 minutes on high heat
Peel the potatoes and cut into small chunks
Check the beans and add some salt to taste. Leave to cook for 2 minutes.
Heat up the oil in another pot or pan and add some onions then the crushed peppers. Add a little salt to taste and leave on low heat for 3 minutes while stirring.
Add the potatoes to the beans to cook 5 minutes
Pour in the oil and pepper sauce from the pan into the beans and potatoes then stir. Adjust the taste as needed and it is ready to eat.
