Holla amigos friends! It's a beautiful and sunny day in my region, vegan love to you all. I made a bean cake/pudding wrapped with Serendipity berry leaf, it's actually my first time using this plant wrap and it definitely won't be my last as I would explore other lovely recipes with this plant.
Serendipity berry plant gave my bean cake a unique and delicious flavor, it was so tasty so I decided to share with you all my friends. It's totally vegan, you will enjoy it if you give it a try.
The following ingredients are used in preparing this delicious bean pudding.
INGREDIENTS
400g of mixed peppers
5 large onion
1 teaspoon salt
2 cooking spoons soy oil
1kg brown beans
1 bunch Serendipity leaf (Thaumatococcus daniellii)
1 teaspoon masala spice
1 teaspoon sonia pepper
Water
COOKING PROCESS
STEP 1
Start by removing dirts from beans, wash out dirts and remove beans skin. This process is labour intensive, lots of water will be needed to help bean skin float up, continue process until beans is clean and white.
STEP 2
Seive out chaff and continuously change water from beans until beans is visibly clean.
STEP 3
Clean onions, hot peppers and chilli peppers, wash and add them to beans for blending together.
STEP 4
Wash Serendipity berry plant with salt and water, ensure to wash properly and separately. Cut stems with scissors and use to line pot to avoid burning, set aside and proceed to blending.
STEP 5
Blend beans with onions and peppers. After blending, pour into a bowl, add salt, spices, soy oil and pepper.
STEP 6
Add water to get desired consistency, adjust spices for taste, wrap Serendipity leaf and scoop blended beans into it. Cook for 45 to 50 minutes and it's ready. Enjoy with a drink, rice or corn pap.
