Beans, Crispy Potatoes and Amaranth Greens

I love beans when it is prepared well especially with natural ingredients without artificial seasonings. Beans is one meal I enjoy in it's natural state, beans is also naturally sweet and I love it really soft.

Today I will be sharing one of my beans recipe paired with crispy fried potatoes and topped with greens. What a perfect combination!

The following are ingredients used in preparing this meal. A step by step procedure for making the meal will be stated.

INGREDIENTS
6 tubers potatoes
9 hot peppers
1 large onion
2 tablespoon salt
2 cooking spoons palm oil
200g Amaranth greens
4 cups beans
Water

COOKING PROCESS

STEP 1
Pick beans to remove dirt and stones, wash and precook for 15 minutes, wash thoroughly and put back on fire to cook for more 30 minutes.

STEP 2
Prepare ingredients like pepper, vegetables and onions, wash and grind peppers and onions. Wash and slice vegetable.

STEP 3
Check beans when soft, add salt and onions, allow to cook for more 10 minutes, add peppers and lastly palm oil.

Our beans is ready. Now let's prepare our potatoes and green sauce.

STEP 4
Prepare potatoes by peeling, washing and cutting into desired shapes. Add salt and fry in palm oil. Set aside when crispy.

STEP 5
Time for our grean sauce. In a clean pot, add sliced amaranth greens, salt, soy sauce, chili sauce and steam for 2 minutes.

Our delicious meal is ready to be enjoyed.
