I've you explored the sweet combination of beans (honey beans) and sweet potatoes in a meal?
If you haven't, then I think you should because you are going to enjoy it. Beans is rich in protein, folate, potassium etc, while potatoes are also rich in vitamin C as it supports the immune system which helps fight cell damage.
The combination is a good one as it is delicious and very soft, making it easy to chew even for kids.
Well let me share my recipe with you, come along and lets cook.
Remember I love good food, exploring food and I love cooking!
I used the following ingredients to prepare my meal.
INGREDIENTS
1kg beans
6 hot peppers
1 large onion
1 tablespoon salt
2 cooking spoons palm oil
15 tubers potatoes
Water
COOKING PROCEDURE
STEP 1
Put water in a pot, wash beans properly to remove dirts, precook for 5 minutes, drain and wash again.
STEP 2
Clean pot and put back precooked washed beans, add enough water that would soften beans, I used 4 cups of water, add salt and onions and cook for 30 minutes. If you have pressure pot then it will be soft in just few minutes.
STEP 3
Wash, peel and dice potatoes and add into beans when it's properly cooked and soft.
STEP 4
Wash peppers and onions, grind or blend. I used my manual grinder to have a rough paste, add palm oil and pepper mix. Adjust salt to taste and our delicious beans and potato combo is ready to be enjoyed by everyone.
The interesting thing about this meal is that salt is just enough to get the desired natural flavor and sweetness from the meal. The sweet potato adds it's natural sweetness to the beans, so salt is just fine if you love natural taste without much flavors.
