I want to share a simple plantain porridge recipe that I made with lots of love.
So this meal can be prepared in different ways and it's loved by many in different continents of the world because of it's natural sweetness. It can also be paired with other foods.
To prepare this delicious meal, we we need the following ingredients.
INGREDIENTS
8 unripe plantain
4 ripe plantain
1/2 cup of palm oil
3 medium size onion
3 large tomatoes
2 hot yellow pepper
1 tablespoon of salt
1 teaspoon mix spices
1 cup mix dried vegetables
4 cups of water
PROCEDURE OF PREPARATION
Wash plantains, remove skin and dice to appropriate sizes.
Wash tomatoes, pepper and onions, slice them and set aside
Cut dried vegetables and set aside.
COOKING PROCEDURE
Step 1
Set pot on gas and add palm oil, when hot, add in onions and saute for few minutes to draw out flavors.
Step 2
Add sliced tomatoes and peppers to already sauteed onion mixture and allow to fry.
Add spices and salt to taste and allow to fry for 5 minutes.
Step 3
Add in diced plantain and stir, add 4 cups of water and allow to cook for 15 minutes.
Step 4
Add dried mix vegetables and turn off the fire.
And our yummy plantain porridge is ready.
This is a delicious meal with a natural sweetness and definitely a healthy meal for everyone.
