I found your eggplant and chayote recipe to be excellent. Here in Venezuela, we don't usually cook much with coconut milk, but I like the idea of giving it a healthier touch. The truth is that eggplant, when cooked well, is a delight. And with chayote, which we call 'tacacho' in some regions, it must be wonderful. I love that you have such beautiful memories of your childhood and your mother with eggplant.
