How do you love preparing potato? Baked or fried? Mashed, pudding or simply cooked and served with veggies sauce or tomato sauce? Whichever is your preference, just know that you're getting a great nutrients from eating potatoes - potassium, Vitamins C & B6, fiber, antioxidant properties, complex carbohydrates, etc.
I love potato, especially sweet potato and over the weekend, I prepared cooked potatoes with stir fried veggies sauce. So I'll be sharing the recipe with you. I bet you'll love it. 😋
Ingredients
- 3 sizeable potato tubers.
- Pumpkin vegetable (Ugu).
30ml vegetable oil.
1 tablespoon of fresh ground pepper.
¼ tablespoon of dried ground ginger.
1 sizeable onion bulb.
1 sizeable bell pepper, for color and flavor.
Salt.
- Soy sauce.
- Water.
Let's cook
- I started with washing the potatoes, then I cut them into some good sizes and finally they were ready to cook. I added salt to taste.
You'll notice that I didn't peel the skin first before cooking. Well, the reason is simple;
Potato skin is highly packed with nutrients like fiber, potassium, and leaving the skin on when cooking can boost the nutrient content, making them even healthier. Plus, it adds texture and flavor. This, I can confirm.
While the potatoes were cooking, I went on to prep other ingredients.
- I washed all the ingredients that needed washing - pumpkin vegetable, onion, pepper.
- Cutting the vegetables.
- Dicing the onion and bell pepper.
I removed the pepper seeds first before dicing it.
By now the potatoes should have been cooked, so I drained the leftover water. See how tender they look.
Next step is to preparing the veggies sauce
- To my cooking pot, I poured in vegetable oil, added a pinch of salt and allowed to heat up.
- First came the onion and I stirred for some seconds.
- The ginger followed, stirred well.
- Then the ground pepper, another stir.
- The bell pepper went in next, stirred well. Colorful
- I then added soy sauce, according to my taste and stirred well. Here, you can add more salt if need be, but remember the salt in the potatoes.
- Finally, I added the vegetables, another good stir so all the ingredients blend together.
Sizzling hot. 😀
3 minutes later, the sauce is ready to go down with the potatoes. Oh La la! 😀
- I gently peeled the skin off the potatoes, and served in my favourite plate and garnished them with the stir fried vegetable sauce, all looking fresh and yummy.
Now this meal is super tasty and nutritious, a perfect vegan meal plan for everyone - children, adults and aged ones, including vegan enthusiasts.
All the ingredients were in the right proportion, giving the food a distinctive natural flavorful taste. And the veggies, so fresh that I couldn't get enough of it. 😂
