Enter kitchen, let me show you how to prepare an African delicacy: potato,ripe plantain & sauce

‎Our African delicacies are nutritious because they're obtained from natural unprocessed vegetables. I prepared what is known as sweet potato and fresh vegetable sauce. Let me show you guys both the ingredients I used and how I prepared it.

INGREDIENTS

5 sizable sweet potatoes
30 leaves of utazi
8 fruits of fresh pepper
Salt to taste
One big spoon of Red oil or to taste
2 fingers of ripe plantain
Water

Preparations procedure

‎First and foremost, I cut off the tail and head of the potatoes.

‎Next, I washed them without peeling off its skin to absorb all the necessary nutrients.

‎I rewashed to make sure there is no trace of dirt or sand.

‎Immediately, I cut them in twos, put them inside pot, add water to a desired level and then placed on fire.

‎While waiting for the appropriate time to add the ripe plantain, I washed it and set it aside.

‎Next, I washed the onions and pepper and first put the pepper inside a well cleaned mortar.

‎I pounded the pepper for a while, then, I added the onion. At this point, I soaked the vegetable in a bowl with salt to allow all the who-knows-germs to die off.


‎After making sure that the two have properly mixed together, I washed and sliced the utazi leaves. After slicing, I added to the mortar and pound together with the onion and pepper paste.

‎At this time, I opened the pot and found out that it is time to add the ripe plantain because the potatoes were almost done. As you may know, ripe plantain is easy to cook and soft, therefore, since potatoes can stay about 20 minutes before they're done, one can add ripe plantain after 15 minutes.

‎After adding the plantains, I covered the pot and then commenced with the pounding. As soon as the 3 ingredients became a well mixed paste, I added salt to taste and continued pounding for a while.


‎At this point, I brought the pot down, sieve out it's water and same time unpeeled all their skins. Hahaha, i even ate small to taste how sweet the ripe plantain is 🤣😜

‎While waiting it to cool off a little, I scooped out the pastry in a plate, added red oil.

‎As you can notice, the oil is thick. So I double-boiled the oil by putting small water in a pot, set it on fire, put the plate of pounded paste with oil inside the pot so as to melt without frying it. In another method, had It be I noticed the thickness of the oil earlier before pouring away the water I sieved out from the potato, I would have just placed either the bottle of oil or the plate inside the hot water and the oil will melt. So, it goes either.

‎Immediately the oil melted to my choice, I brought it down and served.

‎Wow!!!

‎Food is ready!!!

‎I spent not up to 25 minutes in preparing this simple meal. You can try it out. Nevertheless, come and eat with me..
