Happy day, to all my hive friends, I hope you are well, and can spend a quiet weekend with good food hahaha, today I am sharing a recipe that I love, on this occasion I have added a new ingredient that is luxury, I'm talking about some baskets or baskets of banana and quinoa, filled with vegetables, I had already made them, but only with green banana, now I add quinoa which is special, it prevents diseases, it has a high fiber content, and vitamins, these days I have read a lot about the benefits of these foods, as well as chia, the truth is I was not aware of how fabulous they are and all the benefits they offer to our body, without a doubt I am going to integrate them into my daily diet. Now let's start with the recipe.
Banana and Quinoa Baskets, filled with vegetables.

Ingredients:

1 medium green banana.
3/4 cup of Quinoa.
1 small eggplant.
Half a carrot, half an onion, a sprig of celeri, sweet chili, half a red pepper, two cloves of garlic.
Salt to taste, pepper, paprika powder, a little curry powder, and the spices you prefer.
Olive or sunflower oil.
Procedure:
1- We wash the quinoa well, and then cook it in a pot with 1 cup of water, for approximately 20 minutes, at the same time we cook the banana in another pot with water, until it is soft.




2- After the time has passed, we remove the quinoa from the heat, we see if the bananas are soft, to also remove them from the heat, we make a puree with the banana, and add the quinoa, mix well until we obtain a dough.


3- In a greased cupcake mold with a little baking paper, add the dough, spread it well with the help of a spoon or spatula so that it takes the shape of a basket, and put it in the oven for approximately 15 minutes.


4- While the baskets are cooking, we prepare the filling, chop all the vegetables into squares, and fry them in a pan with a little oil, add the spices, stir, let them fry for a few minutes.




5- Once the sauce is ready, remove it from the heat and set aside, then take the baskets out of the oven to fill them, and put them back in the oven for 10 more minutes, so that they brown.



6- Pasado el tiempo, retiramos las canastas del horno, retiramos del molde, con cuidado, y servimos, para disfrutar de esta delicia, quedaron crujientes, y el relleno delicioso, perfectas para una cena, o almuerzo.
