Happy day my friends! I hope you're all well, and that this week starts off with all the best for everyone. Today I'm joining the contest offered by the Qurator's:Hive Top Chef! | Avocado, I loved this week's topic because the avocado, as they call it in Venezuela, or avocado, is loved by everyone in my house haha, whenever I see avocado in the fruit store I have to buy it, many times getting it is not easy depending on the season, all the dishes that can be prepared with this fruit are a success, and a delight, we normally eat it, in salads, with arepas, as creams, and on this day I want to share with you a delicious recipe, for a creamy pasta, with avocado and pesto, the flavor of this cream is crazy, the combination of avocado and pesto is perfect, plus it is very easy to prepare this dish, we start with the step by step.
Delicious pasta in avocado and pesto cream

Ingredients:

- One medium avocado.
- Olive oil.
- Two tablespoons of pesto sauce.
- 1 cup of short pasta.
- Salted peanuts to taste.
- Salt and pepper to taste.
Preparation:
1- First, remove the avocado skin and cut it into chunks. Bring the water to a boil.


2- Next, add the avocado to the blender, along with the pesto sauce, salt, pepper, peanuts, and olive oil, and blend everything very well. If it seems too thick, you can add a little more oil or hot water. I added 3 tablespoons of the hot water where I was going to cook the pasta, and continued blending until you get a smooth, creamy mixture.





3- Add the pasta to the boiling water and wait approximately 5 minutes for it to cook. I like it al dente.

4- Once the pasta is ready, drain it, remove the water (I leave a little bit of hot water), and add the avocado cream. Mix everything well. The water will make the cream smoother and prevent the pasta from cooling as quickly. Serve. I added a little peanut on top and chopped parsley, and enjoy this delicious dish.
