I am back with a mouthwatering recipe which is instant , healthy , nutritious and full of flavour. With zesty flavour this loved by all and a perfect option for a busy and tiring day .
To make this famous south Indian rice you need some herbs , cooked rice and the main ingredient of this recipe lemon . In the hot oil add all ingredients one by one , toss well and your quick healthy dinner is ready to enjoy . Peanuts add some extra protein and nutritions in it .
Once my sister-in-law made this rice and from that day i want to give it an another try . Yesterday when i had some leftover rice I thought to make lemon rice. With leftover rice this recipe can be ready in just 10 minutes. At my home everyone like it and now I have one more recipe which i can make with leftover rice, first is garlic chilli rice and second lemon rice.

INGREDIENTS ✅
- Cooked rice 2 bowl
- oil 1 tbsp
- Cumin seeds 1 tsp
- Mustard seeds 1 tsp
- Urad dal / urad beans 1 tsp
- Chana dal / split chickpeas 1 tsp
- Curry leaves
- peanuts few
- Dry red chilli 2
- Green chilli 2
- Salt to taste
- Turmeric powder 2 tsp
- Lemon juice 1 tbsp
PROCESS ✅
First cook the rice. I used leftover rice which is already cooked .
Now collect all ingredients together so it become easy to make . I collect fresh curry leaves from my garden , cut the green chilli and use dry red chilli which I store in my refrigerator.
Now in a pan heat the oil .
First add cumin seeds , mustard seeds , chana dal and urad dal . When they start to crackle than add curry leaves and chillies.
The use of both chilli gives it a awesome spicy taste .
Roast for some seconds and add the turmeric powder.
Before the turmeric changed color add cooked rice in it and give a mix .
Cook for 1 min on the low flame and add salt & lemon juice .
Your rice is ready to enjoy .

This is really so simple to cook , because we don’t need to cut any veggies and cooking time is minimum. The sour salty taste with peanuts and lentils crunchyness make it super tasty and mouthwatering.
