Whole wheat pasta with vegetables 🪷🌸 (Eng/Esp)

Good morning hivers how are you? Today I was a bit absent because my husband and I took a trip in the middle of nature if I have time later I will make a post about it in the meantime I will tell you about our lunch today. We wanted something healthy and filling, I saw that I had a pack of whole wheat pasta that I really like and is also healthier than normal pasta so I decided to use it for this pasta with vegetables!

For my recipe you need:

  • 100 grams of whole wheat pasta
  • 50 grams of celery
  • 2 medium courgettes
  • 3 salad tomatoes
  • 3 tablespoons of salt
  • 2 tablespoons of lemongrass
  • 4 large tablespoons of oil

First we clean the celery well and then cut the desired quantity into thin slices.

Buenos días hivers ¿cómo estás? Hoy estuve un poco ausente porque mi marido y yo nos regalamos un pequeño viaje en plena naturaleza. Si tengo tiempo más tarde haré un post al respecto, mientras tanto os cuento nuestro almuerzo de hoy. Queríamos algo sano y que saciara, vi que tenía un paquete de pasta integral que me gusta mucho y además es más saludable que la pasta normal así que decidí usarla para esta pasta con verduras!

Para mi receta necesitas:

  • 100 gramos de pasta integral
  • 50 gramos de apio
  • 2 calabacines medianos
  • 3 tomates para ensalada
  • 3 cucharadas de sal
  • 2 cucharadas de limoncillo
  • 4 cucharadas grandes de aceite

Primero limpiamos bien el apio y luego cortamos la cantidad deseada en rodajas finas.

Then we clean the courgettes and cut them into small pieces, the same goes for the tomatoes, wash them well and cut them into thin strips. We prepare a pot with water and salt to boil and a pan with two tablespoons of oil, add the vegetables to the pan and season with lemongrass, cook for about twenty minutes. When the water in the pot boils, throw in the pasta and let it cook for about 15 minutes. Then we drain the pasta and put it in a large pan with two tablespoons of oil, mix it, then add the vegetables previously cooked in the pan and mix well with the pasta. We serve it hot or cold, it is good either way, it was an excellent healthy lunch.

Luego limpiamos los calabacines y también los cortamos en trozos pequeños, lo mismo ocurre con los tomates, los lavamos bien y los cortamos en tiras finas. Preparamos una olla con agua y sal a hervir y una sartén con dos cucharadas de aceite, añadimos las verduras a la sartén y sazonamos con limoncillo, cocinamos durante unos veinte minutos. Cuando el agua de la cacerola hierva, agrega la pasta y deja cocer unos 15 minutos. Luego escurrimos la pasta y la ponemos en una sartén grande con dos cucharadas de aceite, la mezclamos, luego añadimos las verduras previamente cocidas en la sartén y mezclamos bien con la pasta. Lo servimos frío o caliente, está bueno de cualquier manera, fue un excelente almuerzo saludable.
