Tofu Satay Rujak Seosening
satay rujak seasoning is a combination of tofu cooked with our country's special rujak seasoning then combined with thick coconut milk to get the perfect savory with a spectacular taste. I found this recipe on social media some time ago, how I thought this recipe was almost similar to the tempeh satay recipe I had made previously. But after reading the ingredients, it is very different, this satay has an authentic flavor with a special seasoning for tofu processing that mainly uses coconut milk and also some other ingredients, of course without turmeric and sunti acid which is not included in our local salad seasoning. I think this is just how to make it almost the same as how to pre-cook the tofu so that the spices quickly soak when baked.

Ingredients
100 ml coconut milk
¼ teaspoon salt
1 teaspoon mushroom stock
1 bay leaf
1 lemongrass stem
2 cloves garlic
2 dried chilies
1 hazelnut
Cooking Procedure
Prepare the spices first, here I first fry the dried chilies and candlenuts before mashing them then mash the spices with a little coconut milk until smooth

Cut the tofu into small squares so that when skewered it will be beautiful and neat.
Heat the oil to fry the tofu for just a minute until the tofu is solid and not easily crushed anymore then set aside.
Then sauté just enough onions with bay leaves and lemongrass then add the spices, fry until fragrant.
Add the tofu then add the coconut milk and stir well let the tofu soak up the spices.

Add mushroom broth, salt, cook while occasionally stirring until the coconut milk shrinks, the sauce thickens then let it cool.

Skewer the seasoned tofu pieces with skewers, heat the grill or satay grill while occasionally smearing the remaining spices until browned.
The result
Tofu Satay is ready to be served, serve while warm with fried onions or a sprinkling of nori on top is very tempting. I enjoyed it without using sauce is very good. The marinade soaked into the tofu, the combination of spice paste and coconut milk made it even more savory, especially the candlenut horeng in the spice paste made this dish even more delicious.
