This is my first time participating in the vegan plant power community, it's a pleasure to be here.
Today we'd be cooking fried rice, what's a weekend without rice 😸. Growing up in a Nigerian home, we're always excited to cook rice every Sunday, it's not like we don't cook rice on week days, but cooking rice on Sunday feels so special.
The whole family cooking together and eating together in a big tray, this act brings the family together.i guess, that's what made Sunday rice a special one.
FRIED RICE
Before cooking fried rice, we need to get fresh veggies to give it a very delicious taste. I went to the vegetable market to sort for fresh vegetables.
INGREDIENTS
- 1½ cup of rice
- 1 spoon of black pepper
- Red scotch bonnet pepper
- Tomatos
- carrots
- 1 Red bell pepper
- 3 Green bell peppers
- 2 yellow bell peppers
- 1 spoon of Rosemary leaves
- 2 seasoning cubes
- 2 spoons of curry
- 3 onions
PREPARATIONS
First things first, i washed my rice thoroughly. To eat a healthy meal, proper hygiene must be practiced. I made sure i washed the rice till it became so clean .
Next up was the veggies. I washed them properly and started prepping them. I started with the bell peppers, i don't like the seeds because it has a bitter taste.
Next on the line were the carrots 🥕
STEP 1= Pre cook the rice with curry powder, allow to cook for 20 minutes
STEP 2 = Prep all the veggies
STEP 3= Pre cook the prep veggies, with vegetable oil. Add seasoning to taste, allow to steam for 5 minutes .
STEP 4= Mix the pre cooked rice and the pre cooked veggies together. Stir properly.
I allowed the rice cook on a low heat so that the veggies won't be overly cooked.
