It's a pleasure to be here again. For today's recipe, we'll be cooking vegan based pasta. Here's a thing about vegan base pasta, it's very nutritious, filled with lots of vegetables, and also very delicious.
Let's get into the main deal, listing the ingredients for our special recipe.
INGREDIENTS
- 250g of pasta
- 6 sticks of carrot
- 1 teaspoon of salt
- 1 bulb of onion
- 60g of vegetable oil
- 20g of green peas
- 5 strands of spring onions
- 6 ball of tomatoes
- 5 Scotch bonnet peppers
- 20g of sweet corn
- 20g of green beans
First things first i broke my pasta in my desired length. One thing i love about pasta is the fact that you can break into your desired length, i love my pasta a little long, so i broke the pasta into two equal halfs.
Next up, i washed my pot and added 100cl of clean water into the pot, i allowed the water to hit up for 2 minutes. Then i proceeded to add my pasta.
After adding the pasta into the pot, i allowed it to heat up for 1 minute, then i added 35g of vegetable oil.
After adding the vegetable oil to the pasta, i cover the pot with a lid and cooked on a low heat for 5 minutes. My purpose for cooking on a low heat was because i didn't want the pasta to get overly cooked. If the pasta is overly cooked, it won't come out nice. After allowing the pasta to come to a boil, i turned off the cooker and drained the water from the pasta. Due to too much starch in the pasta, i decided to drain the water from the pasta.
After draining water from the pasta, this is the outcome.
Time to prep the vegetables
After cooking the pasta, i set it aside . Next up was the vegetables. For proper hygiene, i washed all my veggies properly. I washed them till they were properly clean. After washing my vegetables, i put them into a bowl for prepping.
Now it's prepping time!
Prepping vegetables can be stressful sometimes especially when you're doing the cutting alone, on the other hand vegetables are nutritious and we need it for nutrient in our body system, so whenever i think about the benefits of eating vegetables or incorporating vegetables into my meals, i don't mind going through the stress of prepping lots of em.
I start with prepping the carrots, then the green beans.
After cutting the carrots and green beans, i proceeded to prepping the spring onions and tomatoes .
At this point, all my veggies have been properly diced and ready to cook. Below is a picture of how the vegetables look like after cutting them into smaller pieces.
See how fresh and beautiful these vegetables are.
Next up is time to make the pasta sauce.
preparations
STEP 1: Heat up your pan or pot for 45 seconds, heat until the pan is totally dried up and no longer wet.
STEP 2: Add 60g of vegetable oil into the pre heated pot. Heat up the oil for 1 minute, then add onions and stir until your onions are a little soft.
STEP 3: After pre heating your onions, go in with your Scotch bonnet peppers and tomatoes. Stir generously to prevent it from getting burnt, stir for 60 seconds, and set it aside.
STEP 4: This is the most important part because this is where the vegetables come in. Make sure you've removed the tomato sauce from the pot and set it aside. You wouldn't want to cook your vegetables inside the tomato sauce.
STEP 5: Preheat 20g of vegetable oil for 50 seconds. After that, go in with your diced carrots and stir fry for 20 seconds. The reason for adding the carrots first is because carrots are a bit hard to chew. Pre heating the carrots first will enable it to cook properly.
STEP 6: Add other vegetables like the spring onion, green beans, green peas, and sweet corn. Stir generously for 15 seconds, then proceed to add your seasoning cube and salt to taste, allow to heat up for 10 seconds, then add the tomato sauce, stir to combine.
STEP 7: At this point, the sauce is ready, and it's time to add the pasta. Add the pasta into the sauce and stir generously to combine properly, allow to cook properly for 1 minute, and now the pasta is ready to serve .
