Greetings to all the members of Plant Power Vegan community. The weekend should have given a break to most of them from a busy schedule and some of you trying new recipes at your comfort zone.
Here, in our place, its the season of Jackfruit. It is a fruit rich in fibre. Most of us like this said fruit. They are usually eaten when they are sweet. But here we make a lot of dishes out of it. With ripe ones and raw ones.
Today, I decided to prepare a Jackfruit dish, it is actually a side dish to be eaten with rice. And the Jackfruit taken for this purpose is neither ripe nor raw. Just partially ripe n raw.
So, please join me for this cooking.
INGREDIENTS REQUIRED
- Jackfruit - 500gm pulp
- Turmeric - 1/2 spoon
- Salt - as per your taste
- Water - one ordinary glass
For coarse grinding
- Coconut - half portion of one coconut
- Cumin seeds - 3/4 tsp
- Turmeric - a pinch
- Green Chillies - 3 to 4 (spicy required)
- Garlic - 5 to 6 cloves
- Curry leaves - a hand full (optional)
STEP - 1
- In the begjnning, you have to remove the pulp from the Jackfruit and from the pulp the seeds are also to be removed. After which they should be cut into two equal halves. Just give an overall wash and drain them for a minute or two.
STEP - 2
- Now pressure cook them with salt, turmeric and a glass (normal) of water. If desired, you can add few seeds of jackfruit.After the first whistle, reduce the flame to medium and cook it for 5 minutes. And you can switch off the stove. Lay it to rest until the complete whistle is gone from the cooker.
STEP - 3
- Take half the portion of one full coconut. Grate it and keep aside. Along with it add a pinch of turmeric, cumin seeds, garlic, green chilli and curry leaves. Now grind all of them coarsely. Should not be water consistency.
NOTE: Curry leaves is optional but when added , it gives a pleasant aroma.
STEP - 4
- Remove the lid of the pressure cooked Jackfruit, after it cools down. By now it should be cooked thoroughly. Make a small hole in the centre and the coarsely grinded coconut mix. And keep in low flame for 5 minutes. Now, switch off the flame.
STEP - 5
- Take an wooden ladle with a cylindrical edge and mix all of them , so that, the mixture of coconut and jackfruits form a solid consistency. If necessary, you can splutter mustard and red chilli for seasoning, but this is purely optional. Once done, you can check the salt and spicy.
Its ready to be eaten hot, hot...with rice. This item goes well with butter milk or with fish curries. Choice is yours.
