
I used to be confused by the carrots that were starting to wilt in the fridge, until one day I thought, why not make a snack by combining carrots and tempeh into one savory fritter? And this is the result.

The first time I served it to my kids, they absolutely loved this fritter and devoured it. It's a great snack for a relaxing afternoon snack or to take with them to school.
Ingredients:
100 grams tapioca flour
1 block tempeh
200 grams carrots
3 soup leaves
Ground spices:
2 shallots
2 cloves of garlic
3 candlenuts

Method:
🔹Mash the tempeh using a mortar and pestle. Don't make it too smooth, so it has a rough texture for a more intense flavor.

🔹Peel the carrots, wash them thoroughly, then grate them lengthwise or according to your preference.

🔹Grind the spices with a little water.

🔹Wash the leeks and chop them into small pieces.


🔹Add the grated carrots to the ground tempeh.

🔹Add the leeks.

🔹Add 1/2 teaspoon of salt.

🔹Add the flour.
Add the ground spices.

🔹Stir all ingredients.

🔹Heat a little oil for frying, shape the dough into round balls, adjust the shape to your liking, and fry over medium heat until golden brown.

🔹Remove from heat and serve.

🔹Serve the final result.
