Today I wish to share a very nice and healthy Vegan recipe filled with nutrients and perfect for any weather .
Porridge plantain with green leaf vegetables is blessed with different nutritional values,it is also healthy and above all, the taste is unique and awesome.

🌻8 piece of Unripe plantain
🌻1 medium sized onion
🌻 2-3pieces of fresh tomatoes depending on it's size
🌻 1full cup of red oil
🌻1tablespoon of black pepper
🌻1 tea spoon of salt
🌻3cups of water
🌻 Pumpkin leaf for garnishing and additional nutrition
The unripe porridge plantain with pumpkin leaf is a easy meal that takes about 15 minutes to make, it is a very easy meal and the process is easy to make.

👉 wash your unripe plantain with the peel,remove the peels and cut into your desired shapes then set aside

👉 Wash your pumpkin leaf with salt and transfer to a sieve to remove excess water, slice it using a knife and cutting board and set aside
👉 Wash your fresh tomatoes and onions ,
Remove the peel of the onions and slice in a cube or round form, likewise slice your tomatoes to your desired shape and set aside.
👉 In a clean pot, add about two cups of water and place it on your cooker, electric stove or any kitchen equipment used for cooking and allow to boil .
👉Add salt to the boiling water and add your cut unripe plantain and allow for about 2minutes

👉 Add your tomatoes, onions, red oil and black pepper and allow to boil for sometime.
👉Do not allow the water to dry but rather stir occasionally so it thickens and form it's porridge.
👉Add the pumpkin leaf and stir together and bring down from the fire
( Note:many prefer to bring down immediately after adding pumpkin leaf but many also love allowing the pumpkin to heat up a little.
The both is good but I love bringing mine down immediately)
