Today I want to introduce to all of you one of the traditional drinks that is still inherent in Indonesia, namely "Es Cendol".
The name is unique, isn't it? Cendol ice is made from rice flour and tapioca which is processed and then molded, usually in a long shape and then served with the addition of brown sugar and coconut milk sauce.
Because the steps are long, I will immediately share with you the recipe and how to make it
Ingredients for Cendol
30 grams tapioca flour
50 grams of rice flour
10 suji leaves
2 pandan leaves
350 ml water
1/2 tsp salt
1/2 tsp pandan paste
How to make Cendol
• First, chop the suji leaves and pandan leaves, place them in a blender then pour in the blender water until smooth.
• secondly, after it is smooth then strain the pandan water, discard the dregs and take the water.
• third, add rice flour, tapioca, salt and pandan paste then stir until mixed well.
• Fourth, pour the mixture into a cooking pan over low heat (remember that this part must be cooked while stirring continuously so it doesn't burn)
• Fifth, if the dough has come together and exploded, it means the dough is cooked and ready to be used.
• Sixth, prepare a hollow mold like this or with a syringe. And prepare a container filled with drinking water and add ice cubes.
• Seventh, Mold it on a bowl filled with ice cubes so that the cendol can come off and not stick. Do it while the mixture is still hot so it's easier to shape.
• Cendol is ready to use
Sugar Ingredients
150 grams of brown sugar
50 grams of granulated sugar
200 ml water
Pinch of salt
1 bunch of pandan leaves
How to make
• Put all the ingredients in a pan then cook until the sugar dissolves and thickens slightly.
• tips: use good quality brown sugar because it will affect the taste and color produced, this brownish red color is very beautiful but the taste is just right, not too sweet and if you don't have pandan leaves, you can replace it with vanilla extract.
Coconut Milk Ingredients
1,200 ml of water
1 bunch of pandan leaves
100 grams of powdered coconut milk
Pinch of salt
How to make
• Add all the ingredients, stir first so they don't stick together, then cook until boiling and set aside.
Note: if you use real coconut milk, do it the same way
Serving suggestions
• Prepare all the ingredients that have been made.
• take a glass and put ice cubes into the glass
• Add the sugar water first.
• then add the cendol
• Lastly add coconut milk
• Es Cendol is ready to be served
