Yes! When sometimes an elderly member in the household has occasional lactose complications, we got to be creative!

The Helper comes to the rescue!
And this is what I have tried, getting 2 cobs of discounted organic corn (because they are getting dry) and attempt to experiment something that is creamy, nutritious, and dairy free.

And I think it turned out pretty good, don't you think? Even without turmeric powder the soup is vibrantly yellow because of the orange carrots!
I used the "baby blend food" mode because of the old corn. The skin is actually quite tough and the last I need is getting my mom gastric because of it.

Make sure it is on low fire to avoid burnt at the bottom
I even sift the soup before adding extra cubed carrots into the mix. this will ensure the whole creamy effect is there.

You can actually see the carrot cubes in the soup at the background
We ran out of mushroom stock, so I have to use chicken cube stock I found in the fridge to boost the taste. Otherwise it will be so bland that my picky dad won't want to take a sip even though it is super fragrant.
By the time all is done, the whole house was full of soupy warm aroma.
What I used was:
- To cob of fresh corns, removed the corn and chilled
- 1 large clove of garlic
- 1 large slice of old ginger (for that "warm hug" that is great for the stomach)
- 1 cube of chicken stock (you can use others like vege stock or anchovy stock. I wouldn't recommend beef stock)
How about you? Would you give it a try?
Until Then
Stay healthy, stay curious and learn new things, and stay happy!
