Making The Most From Little

About a month ago, my roommate cooked waakye(beans and rice) and there was a little amount of beans left so she kept it in the kitchen cupboard. Normally, she buys more beans to add to the leftover for another meal but this time it just sat in the cupboard for weeks.

A week ago, I was going to look for something in the cupboard when I realized something was moving in the beans so I took it out, poured it in a bowl and realized there were two weevils. Knowing how fast weevil infestation happens, I removed the ones that had been eaten by the weevils and washed the beans thoroughly.

I really didn’t want it to be wasted and I also didn’t know any other thing I could use that little amount of beans for so I stored it in the fridge for days. At a point, my roomie even asked me to throw it away since I wasn’t getting anything to use it for but the thought of people somewhere being hungry just wasn’t allowing me.

That day, I asked Google what to do with that amount of beans and thankfully, it showed me bean fritters/cake. To be honest, I was not so confident in what I was about to do and it made me hesitant for a while because I really didn’t want to waste the beans in any way. I also realized there were a whole lot of ingredients I didn’t have but I still went ahead to use what I had.(beans, pepper, onion and salt)

I brought the beans out from the fridge, washed it again and blended it with pepper, a little salt and water. I then diced onions and mixed the paste with it.

From there, I put a good amount of oil on fire and deep fried it in batches.

This was my first time ever making bean fritters and I was so in love with how it tasted. My roomie also kept asking for more after tasting the first one which made me laugh because she was the same person telling me to throw the beans away.

It was too good to the extent that we had to keep it for the next day just so we could have it with porridge for breakfast. I also wanted to see if bean fritters could last for at least a day so that I would be making them to store in the fridge anytime there’s beans leftover after cooking. I thought the taste was going to be different the next day but it was just as tasty as I left it and I was happy that it passed my test.

I’ve never been one to waste things especially when it comes to crocheting or sewing or even my daily life but ever since I got to know that for every mouth fed, there are three more mouths hungry, I’ve come to really love making use of leftover foodstuff no matter how little they are.
I’m also beginning to realize that it’s actually been helping me gradually become very resourceful in the kitchen now. And oh guess who can make bean fritters now? Me! (Leaps for joy)

The same way you blend your beans and add other ingredients. Instead of frying, you add to a plate and steam till it's ready. But the steam bean cake needs some protein like crayfish or fish itself
