Ingredients:
Cake:
• two ripe bananas 🍌, mashed
• two cups oats (fine or rolled)
• 1/4 cup wholemeal plain flour or, if you want, you can put 30 grams of vanilla protein powder instead
• 3-4 grams ground cinnamon (I put about 6 grams but I just love cinnamon)
• 3-4 grams baking powder
• 1 big carrot, grated
• 1/4 cup crushed walnuts
• 10-20 grams agave syrup/maple syrup/honey (depending on how sweet you want it)
• 400-500 ml milk of choice (start with 400 and add more if needed)
• vanilla extract
Topping:
• two heaped tablespoons of greek yogurt mixed with one heaped tablespoon of cream cheese (you can use low fat if you want it less caloric)
• some crushed nuts
• more maple syrup or honey 🍯 or agave syrup
Instructions:
Preheat the oven to 180 degrees Celsius (350 Fahrenheit)
In a heat resistant pan mash your bananas, then add the oats, grated carrot, flour or protein powder, cinnamon, baking powder, crushed walnuts, sweetener, milk, vanilla extract and a pinch of salt and mix well until you get a smooth texture.

Put it in the oven a bake it for 40 minutes or until it’s golden brown and firm to touch.
Let it cool for at least 1 hour, after that you can add the topping. Mix the Greek yogurt with the cream cheese and spread it on your cake, sprinkle some crushed walnuts and drizzle a little maple syrup and the perfect breakfast cake is ready!
I like to make mine one day before so I can enjoy it in the morning. You can keep it in the fridge for 4-5 days but you need to cover it, otherwise it will get dry. It’s perfect for meal prep over the week.
