Made my own tofu

Rinse beans
Soak beans overnight (3cups bean, 9 cups water)
Pour out extra water
Blend beans in blender with water (9 more cups again)
Pour through cheesecloth bag and smoosh out
Add back some more water (some guides on there I did a random amount to mix out blender, seems others do up to half original amount, I figure doesn't matter in end will just be leftover water in pot) to the pulp to get out more mixture and squeeze dry again

Take it and get to boiling, stirring often, can boil over so used a big pot, drop down to simmer for 15 minutes, stir enough to keep from sticking on bottom and remove foam from top
Turn off stove and rest 2-3 mine, until 80-90c (which honestly my simmer was)
Slowly stir in coagulant (mine was 3tbs rice vinegar mixed in 1 cup water, next is 1tbsp (for half batch so 2 normal) epsom salt to 1 cup water) - - careful not to disturb forming curds too much, when see water separating stop adding coagulant, doesn't need it all
Scoop into press, fold over cloth, put top on and a weight for desired time (20mins for me)
And done
Making epsom salt one now, tomorrow amazonll deliver the other 2 coagulants then can taste test.

But honestly the rice vinegar one tasted fine
And that's a more common household ingredient
