One Pot Chicken Rice Meal!

Happy Weekend! Hoping today is going to be a great day for all of us. Yesterday, I wasn't able to do some activities because I woke with a slightly spinning world. I almost thought I had vertigo but it slowly went away after resting for a few more hours. Perhaps I'm anemic or I lack exercise. Yikes.

I was worried if I can cook in the evening. If not, I'm thinking of just opening some canned goods. Lol. Well, I guess the universe took pity on me and paused the spinning feeling.

I've been wanting to try a one pot chicken rice meal that is similar to the hainanese chicken. I don't have vegetables available on my pantry right now so it's just chicken and spices.





This is a quick post, therefore, I won't be using my usual format. Let's begin cooking!

The one pot chicken rice meal is a very easy to prepare. It's similar to a porridge.

First, I sliced a chicken breast fillet into strips and seasoned it with salt and pepper.





Then set the stove to medium heat. Pour enough oil. When it becomes hot, saute 3 cloves of garlic (minced) and a few slices of ginger until aromatic.





Add a few strips of the chicken and cook it along the garlic and ginger. When the chicken meat began to release its oil, we can then proceed to the next step.





Pour the 1 cup rice (washed and drained) and mix all ingredients together.





Then pour 2 cups of water. The amount of water is the same ratio when you cook a regular rice.





When the water is at the state of almost boiling, add the chicken bouillon and a tablespoon of sesame oil. Mix until the bouillon has melted.





Next, layer the chicken strips on top and close the lid.





When it starts boiling, put the lid ajar until the water has been absorbed by the rice.





It will look like this. You can now close the lid again and set the stove's heat to low for three minutes. Then lower again the heat to simmer and wait for five minutes.

Remove from heat and let it sit for around twenty minutes. Don't open the lid.





After twenty minutes is over, take out all the slices of chicken meat on a plate.





Then mix the rice.





Now scoop enough rice on your plate and add enough meat for your meal.

We're not done yet! But we're almost done!

Garnish some sesame oil on the chicken strips. It's not obvious on the photo but the chicken strips were already glazed with sesame oil on this photo.





I also sprinkled some ground dried parsley on th rice for decoration.





Now, let's make the sauce! I wish I have the ingredients to make the hainanese sauces but I'll just stick with what I have right now. Add one tablespoon of sesame oil.





Then one tablespoon of soy sauce.





Add some dried chili flakes and mix. See? It's that easy!





Okay, here's my verdict on my first try cooking such recipe. I like it! The taste is light but the flavors are also good. I like the evident taste of ginger and I can say that this recipe uses quite a lot of sesame oil. How I wish I have vegetables and ingredients to make the hainanese sauce. Maybe I'll do another version next time!





But honestly, it's just like porridge but dry. Lol. Anyway, that's all! Good morning!
