Ingredients

🥩 1 lb ground beef
🌮 1 tablespoon taco seasoning
🌶️ 1 teaspoon Cajun seasoning
🧅 1 small onion, chopped
🥫 1/2 cup salsa
🥟 10-12 egg roll wrappers
🛢️ Oil for frying (vegetable or canola oil recommended)
🧀 1 cup cheese sauce
🥬 1 cup shredded lettuce


Instructions

1- Prepare the Filling:

  • In a large skillet over medium heat, add the ground beef. Sprinkle in the Cajun and taco seasonings.
  • Use a meat chopper or spatula to break up the beef as it cooks. Once the beef starts to brown, add the chopped onions.
  • Continue to cook until the beef is fully browned and the onions are translucent, about 10-15 minutes.
  • Drain excess grease, then stir in the salsa. Remove from heat and allow to cool slightly.

2- Assemble the Egg Rolls:

  • Lay an egg roll wrapper on a clean, flat surface in a diamond shape with one point facing you.
  • Place a few tablespoons of the beef mixture in the center of the wrapper.
  • Fold the bottom corner over the filling, then fold in the sides. Roll the wrapper tightly, sealing the edge with a dab of water.
  • Repeat with remaining wrappers and filling.

3- Fry the Egg Rolls:

  • Heat about 2 inches of oil in a deep pan to 350°F (175°C).
  • Carefully place the egg rolls in the hot oil (do not overcrowd the pan) and fry until golden brown, about 2-3 minutes per side.
  • Remove and drain on paper towels.

4- Serve:

  • Arrange the egg rolls on a serving platter.
  • Drizzle with cheese sauce and top with salsa and shredded lettuce.
