Ingredients

For the Kofta:
🥩 1 pound ground beef
🧅 1 medium-size onion (finely chopped)
🧄 2 cloves garlic (finely chopped)
🌿 1/2 cup parsley (finely chopped)
🌶️ 2 tablespoons pepper paste
🧂 1 teaspoon salt
🌶️ 1 teaspoon paprika
🌿 1/2 teaspoon cumin
🌿 1/2 teaspoon coriander
⚫ 1/2 teaspoon black pepper
🌶️ 1/2 teaspoon chili flakes
🌰 1/8 teaspoon cinnamon

For the Stew:
🫒 2 tablespoons olive oil
🧅 1 medium-size onion (diced)
🥔 4 potatoes (diced)
🍅 1 tomato (diced)
🥫 1 6oz can of tomato paste
💧 4 cups warm water
🧂 1 teaspoon salt (or to taste)
⚫ 1/2 teaspoon black pepper


Instructions

1- Prepare the Kofta:

  • In a large mixing bowl, combine the ground beef with finely chopped onion, garlic, and parsley.
  • Add the pepper paste, salt, paprika, cumin, coriander, black pepper, chili flakes, and cinnamon. Mix until all ingredients are evenly combined.
  • Form the mixture into 1-inch meatballs, or adjust the size to your preference.

2- Sear the Kofta:

  • Heat a large pan over high heat and add olive oil. Wait until the oil is hot.
  • Add the kofta balls to the pan, searing them lightly on all sides until browned. Remove the kofta from the pan and set them aside.

3- Prepare the Stew:

  • In the same pan, add the diced onion and potatoes. Cook for about 5 minutes, stirring occasionally, until the onion becomes translucent.
  • Add the diced tomato and tomato paste to the pan. Mix well to combine, allowing the tomato paste to cook for a couple of minutes.

4- Cook the Stew:

  • Return the seared kofta balls to the pan. Pour in the warm water, then add salt and black pepper. Mix all the ingredients gently.
  • Cover the pan with a lid and let it simmer over medium heat for about 20 minutes, or until the potatoes are cooked and the stew has thickened.

5- Serve and Enjoy:

  • Garnish with additional chopped parsley, if desired.
  • Serve hot with a side of vermicelli rice.
