Instructions
1- Roast the Kabocha Squash:
- Preheat your oven to 175°C (347°F). Halve the kabocha squash, remove the seeds, and place in a baking dish. Cover with aluminum foil and bake for about 40 minutes until tender.
2- Make the Squash Filling:
- Scoop out the roasted squash flesh into a mixing bowl. Season with salt, pepper, and a sprinkle of grated nutmeg.
- Stir in the breadcrumbs until you achieve a thick, cohesive puree. Set aside for later.
3- Prepare the Pasta Dough:
- In a large mixing bowl, combine the wheat flour and eggs. Knead until you have a smooth, firm dough.
- Cover and let it rest for 20 minutes.
4- Shape the Pasta:
- Dust a countertop with additional wheat flour. Roll out the rested dough into a thin sheet using a rolling pin.
- Cut into rectangles approximately 10 cm x 5 cm.
5- Assemble the Tortéi:
- Spoon a small amount of squash filling onto each dough rectangle.
- Fold over to form 5 cm x 5 cm squares. Seal the edges by pressing firmly with a fork.
6- Cook the Tortéi:
- Boil a large pot of salted water. Gently add the tortéi to the boiling water and cook until al dente.
7- Serve and Enjoy:
- Transfer the cooked tortéi to a serving dish. Top with warm tomato sauce, grated Parmesan, and fresh marjoram leaves.
- Serve immediately for the best flavor and texture.
