How are you all doing? Today, I prepared a delicious ash plantain curry to enjoy with rice for breakfast. It turned out to be incredibly tasty, and I’m excited to share it with you!
Ash plantains are a nutritious and versatile vegetable used in both traditional and modern recipes. Their unique flavor makes them a perfect addition to various dishes, from curries to fries. Required Ingredients...
🍀 Ash Plantain 200g.
🍀 3 Tablespoon of coconut oil.
🍀 A little chopped onion.
🍀 Curry leaves.
🍀 3 to 4 cloves of garlic.
🍀 2 piece of panden.
🍀 A piece of cinnamon.
🍀 A cardamom pod.
🍀 A little tamarind juice.
🍀 About 2 chopped green chilies.
🍀 1/2 Cup of coconut milk.
🍀 Salt as required.
🍀 1/2 teaspoon of curry powder.
🍀 1 teaspoon of chili powder.
🍀 1/2 Teaspoon of turmeric powder.
Method of making....
1 Step.
First, peel the ash plantains and soak them in a mixture of salt and turmeric water for about 5 minutes. This helps to remove any bitterness and maintain their color.
Then, cut them into small cube-shaped pieces and rinse them thoroughly in the same water before proceeding with the recipe.
2 Step.
Next, add a small amount of turmeric powder and salt to the chopped ash plantains. Mix well to ensure the seasoning is evenly coated on all pieces. This step enhances the flavor and color of the dish.
3 Step.
Next, take a pan and add three tablespoons of coconut oil. Once the oil is heated, add chopped garlic, salt, curry leaves, pandan leaves, dried chilies, cinnamon, and fennel seeds. Sauté the mixture until it becomes fragrant and slightly golden, releasing its rich aroma
4 Step.
Next, add the chopped ash plantains to the pan and mix well with the sautéed ingredients. Then, add chili powder, turmeric powder, and curry powder, ensuring they coat the plantains evenly. If needed, add a little more salt to enhance the flavor. Stir everything thoroughly to blend the spices well
5 Step.
Next, add a little tamarind juice and coconut milk to the mixture. Let it simmer on low heat for about 4 minutes, allowing the flavors to blend beautifully. Once the dish reaches the desired consistency, remove it from the heat and set it aside.
