I like chicken dishes, that’s for sure. And honestly, it’s such a blessing (and a danger 😅) that my city is a melting pot of cultures that really know how to treat this protein with respect. Roasted, steamed, fried, poached, braised, grilled, sauced up, or kept simple, chicken shows up in so many forms that I could probably eat a different chicken dish every day and still not get bored.
So for this Sunday lunch, I found my way to Food Republic and, without thinking too much, went straight to Lam’s stall. I already knew what I wanted: Salt Baked Chicken.

This is one of those dishes that always makes me pause and wonder… why do some chefs go wild with seasonings when salt alone can already do so much? Salt, when used properly, doesn’t just make food salty, it brings out the natural sweetness of meat, deepens the savory notes, and somehow makes everything taste more “complete.” It’s simple, but not boring. Quiet, but not weak. And this plate is exactly that.

When my meal arrived, it looked clean and comforting. A whole chicken leg sitting proudly on the plate like it owned the place, a mound of white rice beside it, plus a little cup of chilli sauce that looked like it was ready to change the whole mood of the meal. There were also cucumber slices and cherry tomatoes added on the side, a small touch that makes the plate look brighter and a bit more “balanced” (even if, let’s be real, the main trio here is chicken, rice, and sauce LOL).
The chicken itself was what I came for. The skin had that gentle sheen, and the meat felt tender even before I cut into it. The flavour was subtle at first, not shouting, not trying too hard, just a calm, salted savouriness that lets you taste the actual chicken. I love that. It feels honest.
But the real “upgrade” happens once you dip it into the chilli.

That sauce is a whole personality. It’s tangy, it has good heat, and it’s the kind of tasty that makes you keep dipping “just one more bite” until suddenly half the chicken is gone. It doesn’t overpower the meat, it lifts it. Salt gives the chicken structure, and the chilli gives it attitude.
And because this is Food Republic, there’s also the comfort of eating in an air-conditioned dining area, which (in Singapore weather especially) is such an underrated luxury. You don’t feel rushed, you’re not sweating over your meal, and you can actually enjoy every bite like it’s meant to be enjoyed.



Now here’s the part that surprised me again: the price.
This set is only SGD 7.80, and it’s a whole leg with rice, in a comfortable environment. In today’s food pricing reality, that honestly feels a little underpriced. Not complaining though. I walked away feeling satisfied, happy, and kind of impressed that something so simple can still feel so special.

It’s also funny how this dish works on me emotionally. Even though I’ve had it many times, every time I eat it after a long break (weeks… maybe even months), it somehow feels like I’m rediscovering it. Same recipe, same idea, but a new appreciation every time.
