Vanilla Spritz Cookies

Good Morning!

I felt so sleepy that I didn't wanna get up for Sahoor (morning meal before fasting) ๐Ÿ˜… I don't know why. I went to bed the same time, however, for the past 4 days, I couldn't wake up without the sound of the alarm, somehow.

Today's gonna be busy. Gonna get some meat and whatnot, as I will be cooking Rendang. Traditional dish to have for Eid in Indonesia ๐Ÿ˜๐Ÿ˜๐Ÿ˜๐Ÿ˜

But for now, let's share the 3rd Spritz cookies, Sago Spritz. Sounds similar to the 1st day? It's due to the main flour used, which is Sago flour.

150 g unsalted butter
100 g berry sugar (superfine/castor)
2 yolks
1 pouch vanilla sugar
150 g tapioca starch
50 g AP flour
1/2 tsp BP
Raisins for topping

Mix tapioca, flour, baking powder in a bowl, set aside

Cream butter and sugar, until totally combined and creamy, then beat in yolks, followed with vanilla sugar

Stir in flour mixture, and mix with spatula

Pipe dough onto greased cookie sheet and top with raisins

Bake cookies for 10-15 mins on preheated 300 F

Cool on rack and enjoy!
