I am going to present a very tasty recipe with beans. This is a loved dish in my home and I know that many countries have a preference to this dish too, as beans are very nutritious and can easily satisfy your hunger. Here it is!
Ingredients: 400 gr of small white beans, 0.5ml tomato sauce (preferably homemade), ½ cup of chopped parsley (I keep some in my freezer), ½ spicy pepper sliced, ¾ cup of olive oil, 2 carrots chopped, 3 onions chopped, 3-4 scallions chopped, salt and pepper to taste (I don’t put salt due to my diet). Optionally one vegetables’ bouillon cube
Put your beans in cold water in a deep pot, preferably in pressure cooker and allow to boil for 20 minutes in medium to high fire. In the meantime, chop your vegetables - onions, scallions, carrots, parsley.
Strain your beans and put them on the side. In the pressure cooker, in medium fire, sauté the onions and the scallions in the olive oil while tossing. Add the carrots, the pepper, and the parsley. Keep tossing. In the end, add the beans, toss and add 1 ltr of water. Optionally you can now add the vegetables’ bouillon cube.
Close the pressure cooker and let your food simmer on a low fire for 75-90 minutes. Open the pressure cooker and check the consistency - if it is of your preference. If you want, i.e. if you wish to eat your beans as a soup, you can add a little more water. Season and allow to rest.
Eat your beans with nice cheese or pickles or other side dishes of your preference. Enjoy!
