It may sound weird to combine savoury and sweet like that, but it's really good.
Germany potato pancakes sound really good. I am going to give that a try.
I bet that would go good with the apple sauce.
It has to be served with applesauce.
Grind raw potato and onion (roughly 3:1), add 1 egg, salt.
That's kind of it. The potato starch and the egg will bind the thing.
Fry in clarified butter. Not too hot - take time.
Try smaller patties - it's not a pancake.
Serve with 1 teaspoon sugar on top and applesauce on the side.
Sidenotes: It makes my apartment smell for 3 days. Not an unpleasant smell but 'sticky'.
Better fry outdoors...
Also: it takes a lot of grease every time. Use plenty.
