A dream would be to ferment the apple (from all over the garden) into clear, sweet, fizzy, hard apple cider.

I don't drink alcohol so I would prefer vinegar or food. You can also make brandy...
The alcohol content would be very low.
You'd have to drink liters to get drunk.
Anyways, I respect that; I rarely drink myself.

We just harvested some apples from our tree, no idea what kind it is.. came with the property. Made some yummy apple sauce.

It may sound weird to combine savoury and sweet like that, but it's really good.
Germany potato pancakes sound really good. I am going to give that a try.

It has to be served with applesauce.
Grind raw potato and onion (roughly 3:1), add 1 egg, salt.
That's kind of it. The potato starch and the egg will bind the thing.
Fry in clarified butter. Not too hot - take time.
Try smaller patties - it's not a pancake.
Serve with 1 teaspoon sugar on top and applesauce on the side.
Sidenotes: It makes my apartment smell for 3 days. Not an unpleasant smell but 'sticky'.
Better fry outdoors...
Also: it takes a lot of grease every time. Use plenty.
