Soybeans "cheese" tofu is world-known and loved by many people, both vegans and having traditional ration.
It's full of protein, it's basis for many interesting dishes, and i can be made even at home!
Once I tried doiing it, and it's really not so complicated.
This time I decided to try tofy from a healthy store to use it in my new recipe.
As a rule tofu was used by me for salads or snacks but pancakes....something new!
We've such a recipe in traditional ration where people use cottage cheese for it. I've found a similar recipe where it's replaced by tofu, and the recipe is totally vegan.
So we need:
- tofu 200g
- some vanilla extract
- some orange zest
- some sweetener
- some dried fruits (apricots, plums, raisins)
- rice or any whole-wheat flour - 50g
- plant oil - 20g
- plant milk - 30g
We need to combine all ingredients together and blend them well.
We can use grinder for tofu but in blender it's transformed into dough very fast too.
Then we make small balls as pancakes and fry them for 3 min for each side.
The taste is very delicate, and orange zest smell combined with vanilla is so amazing!
All who tasted my pancakes were in love with them, even those who doesn't like tofy - like my hubby:)
My parents who don't know tofu at all couldn't get what they were made of, and even were sure it's ordinary pancakes of cottage cheese;)
