Are you looking for something creamy and cheesy yet affordable dessert?
Well, I will introduce to you my all time favorite special Buko-Pandan. This is very easy to make, you just have to prepare all the ingredients and mix it.
Yesterday, my husband and I went to supermarket to buy some food supplies for next week, when we went home, I noticed that my neighbor was selling fresh green coconut. Suddenly, I felt thirsty and I told my husband that I would like to drink some fresh coconut water, so without hesitation he bought two pieces.
After drinking the juice, I decided to make a Buko Pandan, so I bought 1 small sachet of Pandan flavored Jelly (Gulaman) powder, cream, and cheese.
First, I cooked the jelly powder and let it set for 30 minutes, while grating coconut meat from it's shell.
Then I prepared the cheese and cut it into cubes.
While waiting for the gulaman or jelly, I prepared the food on the table and get ready for lunch.
By the way, here are the complete ingredients:
- Coconut meat
- Jelly powder - pandan flavor
- Cream
- Cheese
- Sweetener or condense milk (depends on your preference)
When everything is ready I just, sliced the jelly into cubes. I added one pack of cream and the cheese. I mixed it all and I added some stevia to sweetened it.
Then I put it inside the refrigerator to let it cool before serving.
Here's the summary of the procedures:
- Boil the Jelly powder first with water and wait until it becomes ready. Pour it to flat containers for faster formation.
- Prepare the coconut meat or you can also buy some grated coconut meat already.
- Slice the cheese and the jelly according to you preferred shapes.
- Mix all the dry and wet ingredients together until it combines
- Taste it and adjust the sweetness if needed, and let it cool inside the fridge.
Finally after an hour, the Creamy Buko-Pandan was ready to serve. The sweetness and saltiness of the cheese was just right.
