It is a beautiful new week and it is another opportunity to share with you some of the amazing activities I carried out over the weekend in the kitchen. In this post I will be sharing with you how I made some chicken pie for my family to snack on. So, stay tuned and let me walk you through.
Chicken pie is the other version of meat pie and it is made using shredded chicken as the main ingredients along with Irish potatoes, carrots and the likes. Chicken pie are very delicious and moister on the inside which is achieved perfectly when you prepare your fillings. I made use of different chicken parts ranging from the breast to drumsticks. I ensured that I cooked it to be very tender to munch on.
However, it is important to share my thoughts and lessons learnt in the process of making the chicken pie. I thought I could entirely do away with some ingredients especially eggs and it turned out I was making a mistake. Usually, eggs are used to glaze the top of the dough after filling and folding it but I thought vegetable oil will serve the purpose. Trust me, it didn't.
The eggs was supposed to give it a shiny look and a golden brown color but if you look at the pictures of my finished chicken pie they were looking dry on the outside. So, it is a lesson learnt.
I also didn't use carrots and milk because they weren't available in the house at the time of making the snacks.
These are the ingredients that is used to make the dough: 300 grams all purpose flour, 1 tsp baking powder, 150 grams baking margarine, pinch of salt, 1-2 Eggs, ⅓ cup milk or water.
For the fillings these are the ingredients: 200 - 300 grams chicken, 2 irish potatoes (medium), 1 onion, 1 tbsp thyme, 1 tbsp curry powder, 2 seasoning cubes, salt to taste, 2 carrots
Step by Step
- We will start by preparing the fillings.

- Start by cutting your chicken into small chunks. You may decide to marinate your chicken for some minutes. And if you are not marinating, add your thyme, curry, seasoning cubes, salt and mix together. Ensure all the chicken os well coated in all the seasoning.

- Next, place the chicken in a pot or frying pan and leave to simmer for about 5 minutes.
- After the 5 minutes add water and let the chicken cook until it is done.

- Next, add some vegetable oil, onions and stir fry the chicken together with it.

- Next, add your diced potatoes and let it cook with the chicken until it is soft.

- While it is cooking, mix some flour in water and mix thoroughly until it get smooth like a paste.

- The paste will give your fillings a creamy milky feel. Let it simmer for some minutes and put off the heat.


- For the dough, mix the flour, baking powder, baking margarine and salt together. Add some water gradually and mix until the dough is firm and of course not sticky.

- Next, leave in the fridge for about 20 to 30 minutes.
- Take the dough out and use your rolling pin to flatten it and scoop your fillings on it and fold it.


- Use the back of a fork to seal the dough and use a brush to gently rub eggs on the edge and body of the dough.

- Repeat this process for all the remaining dough and place on your baking tray one after the other.

- Bake for about 30 minutes until it begins to turn golden brown.

- Your meat pie is ready.
