On a busy day when you don't have so much time on your disposal, egg sauce can be a lifesaver. You can quickly prepare yourself a sumptuous meal with a couple of ingredients in your kitchen that will give you the satisfaction that you desire. I had to resume work as early as possible today so as to meet up with the deadline of the festive season dresses I have at hand. I don't like to be pressured by customers so I ensure to work and deliver promptly.
So, I had only some fruits - cucumber and garden eggs for breakfast. Due to the stress I was going through I became hungry even before noon and it was quite difficult for me to leave what I was doing for a long time to prepare any serious meal. Thankfully I had a loaf of bread in the house and some eggs, so I decided to make an egg sauce. As soon as the egg sauce was done I had to rush back to the shop where I had my lunch and continued with my work.
Egg sauce is very common in Nigeria and it forms a great deal of our diets. Out of 10 people, about 7 would definitely have some sort of egg sauce in a week which shows how it has been embedded in our daily diets. You'd never get it wrong whether you pair it with plantain, sweet potatoes, boiled yam, Irish potatoes or even rice.
Ingredients Needed
5 eggs
8 medium carrot
5 tomatoes
2 scotch bonnet
1 seasoning cube
½ cup vegetable oil
Step by Step
We'd start by prepping the ingredients.
Start by washing the tomatoes and slice into your desired size
Then wash and cut the scotch bonnet into your desired size.
Do the same with your onions and set aside.
Next, wash your carrots thoroughly and grate into thin slices
You'd continue by cracking the eggs into a bowl and whisk until it is well whisked.
Next, place your frying pan on low heat and add your vegetable oil, once the oil is beginning to heat up add the onions and stir fry for about 3 minutes.
Next, add the sliced tomatoes and sauté for about 5 - 10 minutes and add the scotch bonnet.
At this point add some seasoning cubes and salt to taste. Stir at intervals to prevent it from burning.
Now add the eggs that have been whisked and allow it sit for a few seconds before you stir. Gently add your grated carrots and stir gently to give it a good mix.
Continue giving it a good stir to ensure it is evenly cooked and to prevent it from burning.
Your egg sauce is ready to be served.
