I never skip breakfast because I believe it's the most important meal of the day. However, during school days, I often struggle to find the time, especially when I have to leave early.
Now that school is finished , I finally have time to enjoy my breakfast without rushing!
So, how about we start the day with a simple yet fulfilling breakfast?
This morning, my father bought some pandesal from the market. Pandesal is one of my favorite food to have for breakfast. It's not only fulfilling , but it also pairs perfectly with a cup of coffee.
But instead of the usual margarine or mayonnaise as a filling, why not make it a little more interesting?
I didn’t feel like cooking anything too fancy, just something simple would do. As I was thinking about what to make, I noticed the chickens walking around our backyard. That gave me an idea ‘egg and pandesal for breakfast!’
I quickly headed to our sari-sari store, bought an egg, and hard-boiled it. Then I grabbed some pandesal and sliced it in half.
While waiting for the egg to cook, I made myself a cup of coffee. I usually go for a 3-in-1 coffee, but lately I’ve been trying to stop into it. So today, I had Nescafe Gold and I added with just a bit of sugar.
Once the egg was cooked, I peeled and chopped the egg, then mixed it with a little mayonnaise and salt to taste. I spread the mixture onto the pandesal slices, and just like that, breakfast was ready!
Maybe I should call it... Egg Pandesal Sandwich?
It’s simple, yet for me, it’s such a fulfilling way to start the day.
