  • Good evening, dear hivers, welcome back to my blog! Today, I'll explain how to prepare a delicious "chicken asopao with zucchini and carrot." The magic of this recipe lies in the delicious flavor that all the ingredients acquire during the cooking process. The secret to enjoying the perfect texture of the rice is to cook it until it's well-tender. While preparing our dish, it's important to adjust the amount of broth to enjoy a VERY tasty brothy consistency!
  • Buenas noches queridos hivers, bienvenidos de nuevo a mi blog! Hoy, les explicaré como preparar un exquisito "asopao de pollo con calabacín y zanahoria". La magia de esta receta la encontramos en el delicioso sabor que toman todos los ingredientes durante el proceso de cocción, el secreto para disfrutar de la textura adecuada del arroz es cocinarlo hasta que se ablande bien, mientras preparamos nuestro platillo es importante rectificar la cantidad de caldo, para así poder disfrutar de una consistencia caldosa MUY sabrosa!

  • To make this recipe, I used the following ingredients: zucchini, carrots, ripe tomatoes, green onions, red bell peppers, onions, garlic cloves, fresh coriander (leaves and stems), chicken breast, and rice. For seasoning, I used pepper, cumin, paprika, and salt.
  • Para realizar esta receta utilicé los siguientes ingredientes: calabacín, zanahoria, tomates (maduros), cebollín, pimiento rojo, cebolla, dientes de ajo, cilantro fresco (hojas y tallos), pechuga de pollo y arroz. Para condimentar utilicé pimienta, comino, pimentón dulce y sal.

PREPARATION/PREPARACIÓN

  • The first step is to cook our chicken breast, previously cut into small cubes, in 2 liters of chicken or vegetable broth. I used some broth I had reserved from previous preparations. If you don't have any, you can dissolve a chicken or vegetable cube in the cooking water.
  • El primer paso será: cocinar en 2 litros de caldo de pollo o verduras nuestra pechuga de pollo, previamente cortada en cubos "pequeños". Yo aproveché de utilizar un caldo que tenía reservado de preparaciones anteriores, en caso de que no tengan, pueden disolver una pastilla de pollo o verduras al agua de cocción.

  • Sauté the onion, along with the garlic cloves and the bell pepper. I prefer to use red bell pepper for this recipe, due to its slightly sweet contrast. Cook until they reach a soft, crystalline texture.
  • Sofreímos la cebolla, junto con los dientes de ajo y el pimiento, para realizar esta receta prefiero utilizar pimiento rojo, por el contraste ligeramente dulzón que posee. Cocinamos hasta que tomen una textura suave y cristalina.

  • We add the carrot, along with the zucchini... In this step, we season with: pepper, cumin and salt.
  • Colocamos la zanahoria, junto con el calabacín... En este paso, condimentamos con: pimienta, comino y sal.

  • Next, we add the sautéed vegetables to the broth... I suggest adding a touch of powdered Carmencita (food coloring) to give it a beautiful color.
  • A continuación, integramos al caldo el sofrito de verduras... Les sugiero añadir un toquesito de carmencita en polvo (colorante alimentario), para que tome un hermoso colorido.

  • We add the tomato (remove the seeds)... We add the chives, along with our aromatic coriander.
  • Integramos el tomate (extremos las semillas)... Incorporamos el cebollín, junto con nuestro aromático cilantro.

  • In this step: we add the "rice" and cook it over high heat, stirring occasionally to prevent it from sticking to the bottom of the pot. If you feel you need to add more broth, you can add small amounts. Remember, the magic of this dish is achieving a brothy consistency.
  • En este paso: agregamos el "arroz", cocinamos a fuego "alto", mezclando de forma ocasional, para así evitar que se pegue en el fondo de la olla. Si consideran que deben añadir más caldo pueden colocar pequeños toquesitos, recuerden que la magia de este platillo es conseguir una consistencia caldosa.
