Ginataang Mackarel With Spinach

Hello, how are you? So grocery and getting expensive these days, so budgeting meals to cook is very crucial and confusing at the same time.

To make a mackerel in a can, to feed 5 people, adding filler food to it is the solution, so as to make the simple canned fish a proper dinner meal. So I am going to cook mackerel using coconut milk, or we call it ginataan in Tagalog. To make it healthier, I added the spinach we bought last week.



Ingredients I Used:

  • 1 tbsp. Cooking Oil
  • 4 Clove Garlic
  • 2 Small Red Onion
  • 1 Thumb Ginger
  • 425G Mackarel In Can
  • 1 tsp. Fish Sauce
  • 1/4 tsp. Ground Pepper
  • 200ML Coconut Milk
  • 1 Cup Spinach


Let's Cook!

In a hot pan, I added a tablespoon of cooking oil.

And then I added the aromatics like garlic, red onion, and ginger, and let it cook until the aroma comes out.

And then I added 425 grams of Mackarel in a can.

Then I added a teaspoon of fish sauce. Mix them until well combined.

And then I added about 1/4 teaspoon of ground pepper.

Then I added 200 ml of Ginataan (coconut milk).

Mix until well combined and then let it simmer for about 10 minutes on low heat. Doing this makes the flavor seep into the mackerel.

Then I added this cup of spinach, let it cook for about minutes only because spinach just need blanche to cook it.

Mix them until well combined, and to make the spinach cook evenly.

The Ginataang Mackarel is already cooked, after that I plated it in a bowl.
