Ginisang Black Beans with Ampalaya Leaves

Hello, how are you? My family is craving black beans last week, but sometimes timing is not in the right timing, so the only time I can cook a decent meal is when it is the weekends or sometimes at dinner. I rarely cook a decent lunch since this year started LOL.

When I hear black beans, it means it took hours to cook, as I remembered it started cooking at 9 am and finished at 12 noon, so I suggested that we need to buy a pressure cooker the next time I cook it because it consume so much gas and time, but after eating it, it is worth it the time and effort LOL.



Ingredients I Used:

  • 1 Cup Black Beans
  • 1 Kilo Pork Meat
  • 1 tbsp. Cooking Oil
  • 4 Cloves Garlic
  • 1 Onion
  • 1 Thumb Ginger
  • 1 tbsp. Fish Sauce
  • 2.5 Litre Hot Water
  • 1 Chicken Broth Cube
  • 1 tsp. All-in-one seasoning
  • Ampalaya Leaves


Let's Cook!

In a pot, I added 1 tablespoon of cooking oil.

Then I added the meat and then cooked it until the colour turned brown.

And then I added the aromatics like garlic, onion, and ginger.

After that, I added 1 tablespoon of fish sauce and let the fish sauce seep into the meat for about 20 seconds.

I added about 2 litres of hot water to the pot.

Then I added the black beans next.

To make the broth more delicious, I added a chicken broth cube.

Let the meat and black beans cook for about 2-3 hours, and I make sure I gradually add hot water into the pot every 30-1 hour until the beans are completely tender. If you have a pressure cooker, it is better to cook the food in it because it will cook the food faster. You know when the beans is cook when they start cracking.

After that, I added more seasoning to the broth by adding about a teaspoon of all-in-one seasoning.

For the ampalaya leaves, I put them in a strainer and then just soak them in the broth for about half a minute or until they reduce in size. Do not mix it into the broth because it will make the broth bitter. If you don't have ampalaya leaves, you can use malunggay leaves.

The meat is so tender, and the beans are soft too and in perfect balance with ampalaya leaves. Serve hot and plated.
