âLet me share with you what I cooked for dinner last Sunday... A simple and easy to make.
â
âI decided to put together corned beef and fried eggplant.
â
âItâs a humble dish that tastes incredibly good and pairs perfectly with hot steamed rice.
â
âIf you love simple home-cooked meals, youâre going to love this one!

âIngredients:

â⢠1 can corned beef (around 150g)
â⢠1 medium eggplant, chopped
â⢠4 cloves garlic, chopped
â⢠1 small red onion, sliced
â⢠2â3 tablespoons cooking oil
â⢠Salt and pepper to taste

âLet's cook!

âFirst, I washed the eggplants well and sliced them into whatever shape you prefer. I heated the oil in a pan, then fried the eggplant pieces until they turned soft and light brown on both sides. Once cooked, I set them aside on a plate.

âIn the same pan... I left a little oil for extra flavor, then sautĂŠed the garlic and onion until they became soft and clear.
â

âNext, I poured in the corned beef and mixed it well with the onions and garlic. If you want it a bit saucy, you can add a small splash of water here. I let it cook for about 3â5 minutes, stirring occasionally, until it was heated through.

âThen I seasoned it with a little salt and pepper to taste.
â

âAfter that, I placed the fried eggplant back into the pan with the corned beef, tossed them gently together so the flavors blend, and let them cook for just 1 more minute.

âTransfer everything to a plate, serve hot with fluffy rice, and you have yourself a perfect dinner.
