ନିମ୍ବ ପତ୍ର ଭଜା- This is an authentic Odia recipe, particularly very popular in some parts of Western Odisha. The colloquial name of this recipe is ନିମ୍ବ ପତ୍ର ଭଜା(Neem Leaves fritters), this is not deep fried, this is always shallow fried in a flat pan(tawa fried).
You need to be very careful in selecting tender neem leaves, otherwise the taste will drastically change. So the choice of neem leaves has to be essentially tender ones, when its color is red, you should not pick the green leaves.
Ingredients:-
- Tender neem leaves
- 1 tablespoon gram flour
- 1 tablespoon rice flour
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon chilli powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon Salt
- 1 tablespoon oil
Wash the neem leaves, and sort them properly, make sure you have a larger proportion of tender neem leaves that are red in color.
Add salt, followed by turmeric powder, chilli powder, coriander powder, etc.
Then add 1 tablespoon of gram flour and 1 tablespoon of rice flour. Rice flour will make it crispy.
After mixing all the ingredients, leave it for at least 15-20 minutes. And make sure you maintain a proper consistency, it should not be too tight nor too loose.
Then place the flat pan(preferably a tawa) on a gas stove. Put 1 tablespoon of oil. Keep the heat medium initially. Do remember that after 3/4 mins or so you need to lower the heat and keep it low-medium so it will be cooked properly and make it crispy.
Always go for mustard oil for this recipe, which will enhance the taste.
It will take around 15-20 mins time. Always make sure to maintain a lower thickness so that it is cooked properly and gives that crunchy-ness.
Please note that it is my Mom who prepared this dish. And she is an expert. This is one of my favorite dishes. Odia people used to serve this dish with ପଖାଳ.
