Hello dear friends of Hive Food, it's been a while since I've shared a delicious meal recipe, and just yesterday I made my mom's fried rice. Thanks to her culinary advice, I decided to make this tasty dish for lunch. It's a bit of work, but believe me, it's worth it. Today I'm going to show you the steps I followed. I started by cooking the rice first. I washed it several times until the water ran clear. Ideally, it's best to cook the rice the day before, but I started cooking it hours before the main dish to give it time to cool down and make the rice fluffy. Then, in another pot, I boiled the chicken breast. I added salt to both the rice and the chicken. This step was done beforehand.

After I had the rice and chicken ready separately, and as lunchtime approached, I started chopping the vegetables for the fried rice: cabbage, carrot, garlic, onion, scallions, and bell pepper. I grated the carrot since it takes a while to soften, so that's my preference. I sliced the cabbage into strips or julienne strips, as well as the bell pepper and onion. Finally, I chopped some scallions and set some aside to add at the end, and I also chopped the garlic. And that's how the greens are ready.

Continuing with the preparation, chop the chicken into several pieces and sauté it separately in a pan. Just let it sauté for a while, and in a large pot or pan, add a little oil to start sautéing the cabbage, onion, and bell pepper.

Continuing with the sofrito, when I saw that the chicken was almost cooked, I added the carrot and stirred it several times. Then I added the rice, and at this point I added the seasoning, salt, and soy sauce. Next, I added the chicken, and the smell of this rice was incredibly delicious. I continued stirring, but not too vigorously so that the rice wouldn't fall apart, just enough to ensure all the ingredients were mixed. I also added a little more soy sauce because I felt it needed more.

And to finish this preparation, I let it rest for a moment, then started serving it in a cup that I have that looks like a Chinese restaurant cup, and I garnished it with scallions at the end.
