Steamed Broccoli With Tempeh For Healthy Breakfast

Hmm, wait, I think I'm crazy about steamed food. That sounds good. At least I'm used to low-oil or even oil-free foods like that.

Indeed, various creations are needed so that we don't get bored and I also often look for new creations on Pinterest or YouTube.

Some time ago after I successfully experimented to make delicious steamed tofu for breakfast, this time I also wanted to try experimenting with Tempeh. Indeed, tempeh is popular in Indonesia so maybe for those of you who can't find tempeh you can replace it with another source of protein that has a texture that can be used as a solid base.

I didn't expect the results to be beautiful and very filling. So I am happy to share my experience in creating a new menu this time, which might be an inspiration for those of you who are looking for a healthy breakfast, of course a breakfast that is not sweet.

For the vegetables here I use broccoli because broccoli is one of the vegetables whose protein is complex in nutrition. For me, of course, broccoli has an attractive color so that later this dish will create a beautiful layer.

In the end, broccoli will not have a distinctive aroma like boiled or stir-fried broccoli. So maybe this can be used as a creation to make children like to eat vegetables.




THE INGREDIENTS

  • 100 grams tempeh
  • 3 eggs (only 2 in the picture because I forgot to add one egg 🤣)
  • 1 small broccoli head
  • 1/2 tsp of salt
  • 1/2 tsp of coriander powder



COOKING INSTRUCTIONS

Some of the steps in making this menu are quite complicated, but I think it's to exercise the muscles of the arms and shoulders ehehe. Oh, also the leg muscles because I cook while standing.

I prepare the tempeh first. I use a wooden pestle to smooth the tempeh. There is no need to steam the tempeh to change the texture of the tempeh because basically the tempeh is already cooked.

I mash the tempeh slowly. Later the tempeh can be solid but soft like mashed potatoes or mashed tofu.

Then, I took two bowls that would be used for steaming. After that, I slowly divided the mashed tempeh into two parts.

I carefully arranged the tempeh in a heat-resistant ceramic bowl, forming a good base for the next layer. Then set it aside while I prepared the other ingredients.

I moved on to preparing the broccoli. This was a bit complicated because I had to separate the soft and hard parts so that my manual chopper could mash all parts of the broccoli without throwing anything away.

Basically, all parts of broccoli can be cooked and we only need to throw away the outermost hard skin on the fibrous stem.

I also moved on to the egg mixture after I was ready with the broccoli. Prepare a bowl then beat 3 eggs. Then I added salt and coriander powder.

After stirring evenly, I added chopped broccoli. Stir until it forms a good mixture.

I continued to heat my steamer. Then, I switched to preparing all the layers.

After I made the tempeh layer in the 2 bowls, I added a layer of broccoli and tempeh mixture.

If you don't use a ceramic bowl, then use a non-stick coating such as baking paper so that later the dough is easy to remove from the bowl or mold. So you can use other types of cake molds that you have to steam the tempeh broccoli mixture.

Then I steamed the dough for twenty minutes. After it's cooked, let it cool for a while before removing it from the bowl or from the mold.

Look at the color and shape, it's fluffy, it looks like a steamed cake, ehehe. But of course it's not sweet!

After a while, but it was still warm, I slowly removed them from the bowl. Then I cut the dish.

Oh, it's really like a cake! But soft and dense. You can serve it with your favorite dressing sauce.

For one bowl can be up to 3 people and quite filling. I even only finished one slice ehehe.
