Hi 😊🥰...Greetings, dear foodie community! Tell me, don't you crave a delicious papaya dessert made by your mom or grandma? 🥺 And who wouldn't? We Venezuelans always have fond memories of our grandmothers and mothers preparing this delicious treat for Holy Week and Christmas. I remember, as far back as I can remember, my grandmother cutting more than three papayas to make this delicious dessert for our family. Watching her grow up making this delicious treat, I also cultivated the art of copying her recipes. Although she always accompanied me and taught me how to make it, I hadn't had the opportunity to make it on my own without her help to see how much I had learned the recipe and make it like her. 🤭 Of course, it will never turn out exactly the same, since everyone has a different touch, and my grandmother's is unique and special, something we always enjoyed in every meal she made.

My grandmother always made papaya candy with coconut, since she's long been known for her famous oven-baked bread, which consists of small, ring-shaped pastries and empanadas made with white cornmeal that's been soaked and baked. This popular sweet, which originated in the city of San Cristóbal, Táchira, here in Venezuela, was filled with it. It's prepared in many different ways throughout the country, and is also popular on Margarita Island and in Colombia. In this case, I'll share the recipe my grandmother taught me: grate your papaya, add panela (unrefined cane sugar), water, and a few cloves to taste. These cloves are essential to the recipe, as they give the candy its distinctive spiced aroma. So, join me in making it! 😊

We start by making cuts in the papaya outside the peel so that it releases that white liquid which we call "the milk". Once it finishes releasing it, we wash it and proceed to cut the top and bottom parts, the stick where our papaya grows from, and the base.

We proceed to peel our papaya completely without leaving any trace of its peel since it is bitter, and then we cut it in half.

It's time to remove the seeds from our papaya and cut it into four slices, cleaning it well so that no seeds remain inside. We wash it well and with the middle part of the stem we grate each slice of papaya as if we were grating a carrot. It literally reminded me of grated carrot because of its color 🤭

We're going to add our unrefined cane sugar; for this, I cut it into several pieces so that it doesn't add it whole and can melt much faster while the grated papaya boils. Then we add 300 ml of water and put it over medium heat in a large pot to prevent the sweet from boiling over while it cooks.

Next, we added the cloves. Here were the cloves undergoing a smell inspection with me. I couldn't stop smelling how delicious those cloves were 😁😄. We added them directly and waited for it to start boiling.

Once the panela has melted, add the tablespoon of sugar and let our sweet cook semi-covered for 30 minutes. We will know that our sweet is ready in 3 steps: (1) Our papaya grating becomes crystalline, (2) It collects from the bottom, (3) We can observe that it has a shiny tone on the surface, remove from the heat, let it cool for 1 hour and then we can add it to the trays to serve.
