Today, we are going to make one of the best Nigerian soups known as garden egg leaf soup.
This soup is a Nigerian soup made mostly by the easterners called the Igbos in Nigeria.
Garden egg produces some edible fruits and also the leaves are being used for making soup.
Garden egg leaf has so many health benefits, experiences have shown that the egg is very good in promoting fertility it is also very good in building red blood cells and it can be prepared in different ways, garden egg leaf can be squeezed and drunk like water while can be used in preparing different type of dishes like rice beans porridge potato and other food.
In our family house my mother will always use garden egg leaf to prepare soup because we were growing up we always had fevers that resulted to shortage of blood, this leaf is a bit bitter but the health benefits is more important.
So, because of my health issues and I was diagnosed with having low red blood cells, I decided to prepare garden egg leaf soup to help build my red blood cells. Let's take a look at the ingredients that I used.
Ingredients
- 1 kilo of protein
- 1 kilo of dry bunga fish
- One handful of garden egg leaf
- 50 g of prawn
- 50 g of crayfish
- 1 cube of seasoning cube
- 1 tsp full of dry pepper.
- Two sticks of stockfish
- 50 MLS of palm oil
- 1 tsp of salt.
Let us Cook.
Firstly, I have to tidy my kitchen so I give myself enough space to prepare my soup, I wash all the dishes and clean up the kitchen cabinet.
I rewashed the pot that I was to use to prepare the soup then,
Secondly, I washed the protein with warm water and made sure it was very clean.
After thoroughly washing the meat, I marinated it with salt, a magic cube, and pepper and allowed it for 10 minutes before putting it on fire.
Then, after 10 minutes, I started cooking the meat with no water. I allowed the meat to drain out its own water before adding four cups of water to allow the meat to cook well, I always like it when my meat is very soft and not hard.
So, I allowed the meat to cook for about 30 minutes, then I added my washed stockfish and dry fish.
I added the palm oil and allowed everything to cook for more than 20 minutes. Then, I added my blended prawn and also allowed it to cook to bring out the taste.
While it was cooking, I went ahead to select the garden egg leaf and slice it into the size I wanted it to be.

By the time I was done selecting the garden egg leaf, my soup was well cooked, and it was time to add the garden egg leaf.
I always like adding my crayfish lastly in whatever I'm cooking this time I picked my crayfish washed it very well and pounded it with my local motor
After adding my crayfish my garden egg leaf soup was ready to serve in the next 2 minutes.
So I quickly boiled hot water to prepare the swallow I am going to enjoy it with which is known as Garri in our local language or cassava flour.
