In my home town okoko item
We are know to have this particular soup akparata,
So I went to the market got the ingredients and I am honored to show u how it's been prepared in our village.
To get started
I had to put together a lot of ingredients in other to make the akparata soup a little bit up to standard
It required=palm oil, fresh pepper 🌶️, dried pepper,
My akparata,salt, egusi, stock fish(okporoko), cowskin (Kanda), crayfish,bangala fish, pumpkin leaf and finally my crayfish Maggie
##Ingredient
Akparata 1 cup
Palm oil =2 cooking spoons
Fresh pepper =4 pieces
Dry pepper =1 tea spoon
Salt=2 tea spoons
Egusi =1 cup
Stock fish (okporoko)=400g
Cowskin (Kanda)=500g
Crayfish =half cup
Bangala fish =500g
Pumpkin leaf (ugu)=500g
Crayfish Maggie = 2 cubes
Preparation
Step 1
Wash ur pumpkin (ugu) like 3 times the last wash should be with salt then put it in a basket 🧺 than start cutting it
After cutting how it looks
Step 2
Wash the stock fish (okporoko) and the bangala fish with hot water, rence again with cold water and put inside ur pot

Wash the cow skin (Kanda) with knife 🔪 or iron sponch for like 3 times add salt in ur last wash, then put inside ur pot
Step 4
Pound the pepper 🌶️ and crayfish together and put inside ur pot.
Step 5
Put ur Maggie and then add water ( akparata soup should be tick so add small quantity of water) like 2 tea cups of water
Than cook for 5 minutes (depending on what ur using to cook eg:gas, firewood, charcoal,or even stove.(I used gas)
Step 6
Add salt and oil when it has started boiling, and cover for like 2/3 minutes.
Step 7
Add ur akparata and than ur egusi and cover turn very well (in other to mix well ) then leave for just 2 minutes

Finally
add ur pumpkin leaf and dnt let it over done, a minute is ok.
Make sure to dish when it's still being cooked in the fire and dnt close immediately after cooking it
Allow to coll small than u can keep inside ur cupboard or dish in a micro plate and keep in ur freezer.
