How are you all, my fellow food lovers!

Last Saturday, my sister has no classes and it's because it's weekend, and guess what she requested? I want to share with you another recipe that really tests my cooking skills. My sister just chatted me, What if we cooked Maja Blanca/Coconut Pudding that is violet (miolet) for her?' 'Hehe', I laughed at how she described that, 'huh??' Really violet, hehe, instead of ube/purple yam. She couldn't wait for my response, so she called to ask what the ingredients were, and I said to her, 'As long as there are complete ingredients, then I will be willing to cook what you've requested.' She lived at the neighboring barangay because they decided to have a house closer to the church and the market and also her neighboring school, where she wants to teach. Actually, she received her new assignments, last September from Caleriohan Elem. to Mantalongon Elementary School. So they decided to have a visit here in our family house, and she cooked for Maja Blanca.

Maja Blanca (Tagalog: [ˈmaha ˈblaŋka]) is a Filipino dessert with a gelatin-like consistency made primarily from coconut milk. Also known as coconut pudding, it is usually served during fiestas and during the holidays, especially Christmas. Maja Blanca has the consistency of thick gelatin and a delicate flavor and is creamy white in color, but today we will have it a purple or violet colour for discovery. Hehe, majaa blanca can easily be adapted to include various other ingredients, often resulting in changes in the color of the dish. Examples include squash Maja Blanca, which uses calabazas (Filipino: kalabasa) blanca (kalabasa), and a version of maja maiz that uses butter, resulting in a distinctive yellow color. Here are the ingredients:
4 cups coconut milk
4 cups water
1/2 kilo corn starch/500grams
1 can Evaporated milk
1 can condensed milk (Ube flavored)
1 can whole corn kernel
1/4 kilo white/refined sugar/250grams
1 pack grated Eden cheese for toppings (optional)
PREPARATION:
There are many ways to prepare this maja de ube, but I prefer this one; it's very simple and quick. hehe
Step 1: I put all the wet ingredients into a pot. Pour the 4 cups of coconut milk, 4 cups of water, then the 1 can of evaporated milk, followed by 1 can of condensed milk. Stir to combine the ingredients.

Step 2: Now, we will put in the dry ingredients while continuing to stir to avoid the corn flour sinking to the bottom. Pour 1/2 kilo of corn flour and 1/4 kilo of white/refined sugar. Then I used a sieve to strain the 1 can of whole corn kernels because only the whole corn kernels are needed. Next, continue stirring for 5 minutes to dissolve the dry ingredients.


Step 3: Now we will bring it to a stove with a medium heat while continuing to stir, but as I continued to stir, my arms got outstretched, so we decided to have a swap with my sister, then my brother, and then the other sister we have until the mixture becomes sticky. And success! While my younger sister continued stirring, it became a sticky one, and we let it stay for 5 minutes for a stickier mixture so that it will easily be dried in a molder or a Tupperware.



Step 4: After 5 minutes, with the help of my two sisters while I was busy capturing their moments, my sister couldn't resist her craving as you can see in the picture, she wanted a taste of it. So they transferred it to a bowl or Tupperware so that it would not stick to a pot.


Step 5: My sister adds grated cheese on top of it, but it's optional. And there you go, we made 1 flat Tupperware and 2 others on disposable plastic Tupperware, too. Her son says 'yummy' upon having a little taste of the maja de ube. Also, it will not be complete without documenting these. hehe
