Love these cookies/confections, especially when they are just the slightest bit chewy in the middle while still crunchy and caramelized on the outside!

Most of mine turned out to be like that, although I wanted them to be rockhard initially. But when I tasted them, I enjoyed the little chewy middle as well. I even found it better! :D
